When times are rough, people are forced to invent new things. After the Second World War people made coffee surrogate from malt or chicory roots, cutlets from rutabaga and instead of fresh milk there was only milk powder available. Bad times for the people back then, but nowadays there are many fans of malt coffee, and even rutabaga has made its’ way back to the farmer’s markets, since there’s a new hunger for regional ingredients.
Many a genius invention came out of chance. Who hasn’t created an awesome new dish from random leftovers in their fridge? One of my best creations actually originates in my allergy to nuts – the Samba Latte.
