
The cuisine of the Brazilian Amazon is one of the richest in the world, still in the discovery phase, in a slow process, even within Brazil itself. Its ingredients, diversified and unique, seem to undo the mosaic of options that today serve as a basis for the Brazilian’s diet.
In all regions of Brazil, including parts of the northern region, these northernmost ingredients are still treated as exotic. We easily see the best restaurants serving tasting menus with “tucupi” broth, some kind of dumpling with “maniva”, “murici” that serves to complete a dish. However, the same ingredients are part of the daily food of an entire region, in the form of juices, sweets and typical dishes.
