4 Levels of Pasta Bolognese: Amateur to Food Scientist | Epicurious

We challenged chefs of three different skill levels – amateur Emily, home cook Lorenzo, and professional chef instructor Frank Proto – to prepare a pasta Bolognese that would make nonna proud. Once each level of chef had served up and sampled their creations, we asked expert food scientist Rose to explain the choices each chef made along the way – both good and bad. Which pasta Bolognese are you bringing to Sunday dinner?
