Britain’s population exploded during the Industrial Revolution. To sustain that growth, they needed a lot of food and, therefore, a lot of fertilizer. Their ports were clogged with boatloads of imported poop and bones from all over the world, until they discovered a rock that was the best fertilizer of all. Ever since, our entire global food system has precariously teetered on access to a precious fossil resource: phosphorus.
